
Ingredients:
1 box Mind Blown Dusted Scallops
8–12 oz spaghetti
2–3 tbsp orange sesame dressing (store-bought)
1–2 tbsp coconut oil
1 orange (zest and juice)
Sesame seeds
Cilantro & orange slices for garnish
Directions:
1) Cook the Spaghetti. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package directions until al dente. Drain and set aside.
2) In the meantime, prepare the Mind Blown Dusted Scallops. Heat coconut oil in a large skillet over medium heat. Add frozen Mind Blown Dusted Scallops. Once heated cook, Mind Blown Dusted Scallops 1 minute each side; drizzle with orange sesame dressing and coat all the scallops cooking 1-2 additional minutes to coat completely. Remove from skillet and set aside; reserve on a plate.
3) Toss the Pasta. In the same skillet, add the cooked spaghetti. Pour in the remaining dressing (add more if desired). Add the juice of half the orange and the zest of the whole orange. Return the cooked scallops to the skillet and toss everything together until well combined.
4) Garnish and Serve. Sprinkle with sesame seeds and extra orange zest if desired. Garnish with fresh cilantro and orange slices. Serve immediately and enjoy!
