
Ingredients:
For the Po'Boys:
1 pound Mind Blown Crispy Crunchy Shrimp
2 soft French rolls or hoagie buns
1 cup shredded lettuce
1 ripe tomato, sliced
Pickle slices (optional)
Vegan remoulade sauce (see below)
Quick Vegan Remoulade Sauce:
¼ cup vegan mayonnaise
1 tsp Dijon mustard
1 tsp hot sauce (adjust to taste)
1 tsp lemon juice
1 tsp pickle juice
½ tsp paprika
Salt and pepper, to taste
Instructions:
1) Prepare the Mind Blown Crispy Crunchy Fried Shrimp:
Conventional Oven:
- Preheat oven to 425°F.
- Place frozen shrimp in a single layer on a greased baking sheet.
- Bake for 10-12 minutes until golden brown.
Air Fryer:
- Lightly spray shrimp with cooking oil.
- Air fry at 370°F for 8-10 minutes until crispy and golden brown.
Note: Cooking times may vary. Ensure shrimp reach an internal temperature of 165°F.
2) Prepare the Vegan Remoulade Sauce. Mix all ingredients in a bowl until well combined. Refrigerate until ready to use.
3) Toast the Rolls. Lightly toast the French rolls to your preference.
4) Assemble the Sandwiches. Spread a generous amount of the vegan remoulade sauce on both halves of each roll. Layer with shredded lettuce, tomato slices, and pickle slices (if using). Top with the cooked Mind Blown Crispy Crunchy Fried Shrimp. Serve immediately, enjoy!
