
INGREDIENTS:
For the Shrimp:
1 lb Mind Blown Crispy Crunchy Fried Shrimp
Oil for cooking (we used use an air fryer)
Sweet Chili Sauce Dressing
1/3 cup Thai sweet chili sauce
1 tbsp soy sauce
1 tsp sriracha (optional for heat)
1 tsp lime juice
Build your bowl
2 cups cooked jasmine or basmati rice
1 cup shredded red cabbage
1 carrot, shredded
Fresh cilantro or green onions, chopped
Toasted sesame seeds (optional)
Lime wedges for serving
1) Prepare the Mind Blown Crispy Crunchy Fried Shrimp:
Conventional Oven:
- Preheat oven to 425°F.
- Place frozen shrimp in a single layer on a greased baking sheet.
- Bake for 10-12 minutes until golden brown.
Air Fryer:
- Lightly spray shrimp with cooking oil.
- Air fry at 370°F for 8-10 minutes until crispy and golden brown.
Note: Cooking times may vary. Ensure shrimp reach an internal temperature of 165°F.
2) Make the Sauce: In a small saucepan over low heat, combine the Thai sweet chili sauce, soy sauce, sriracha (if using), and lime juice. Stir and heat gently until it thickens slightly — about 2–3 minutes. The result is a glossy, sticky sauce ready to cling to the Mind Blown Crispy Crunchy Fried Shrimp.
3) Toss the prepared shrimp: As soon as the Mind Blown Crispy Crunchy Fried Shrimp are cooked and crispy, toss it with the warm sauce in a large mixing bowl.
4) Build Your Bowl: Start with a bed of prepared jasmine or basmati rice. Then, arrange the prepared slaw. Add the coated Mind Blown Crispy Crunchy Fried Shrimps on top, and finish with chopped cilantro or green onions, sesame seeds, and a squeeze of lime.
