
Ingredients:
1 Box Mind Blown Dusted Scallops
High-heat oil (for pan frying) or cooking spray (for air fryer)
¼ cup cornstarch
1 plant based egg substitute, beaten
½ cup panko breadcrumbs
½ cup unsweetened shredded coconut flakes
Directions:
1) Prep the Coating Station: Set up three shallow bowls:
Bowl 1: Cornstarch
Bowl 2: Beaten egg (or egg substitute)
Bowl 3: A 50/50 mix of panko and coconut flakes
2) Coat the Scallops:
Working with one scallop at a time (from frozen is fine), roll each in cornstarch, dip in the egg substitute, then coat in the panko-coconut mixture. Set aside on a tray.
3) Cook the Scallops:
Skillet Method:
Heat high-heat oil in a large skillet over medium-high heat.
Cook coated scallops for about 1 minute per side, or until golden brown and crispy.
Remove from pan and place on a paper towel-lined plate.
Air Fryer Method:
Spray the air fryer basket with cooking spray.
Add coated scallops in a single layer.
Air fry at 360°F for 10–12 minutes, flipping halfway through for even crispiness.
Serve as an appetizer, entrée topper over rice, or party snack. Enjoy!
