
1 pound Mind Blown Crispy Crunchy Fried Shrimp
1 bag of tortilla chips of choice
1/2 C Salsa
1/2 C Vegan queso (we used Mother Raw)
1/2 C Black beans
1/4 C Vegan sour cream
1/2 Avocado
1 bunch of Cilantro
Jalapeño, sliced *optional
1 Lime, quartered
1) Prepare the Mind Blown Crispy Crunchy Fried Shrimp.
Conventional Oven:
- Preheat oven to 425°F.
- Place frozen shrimp in a single layer on a greased baking sheet.
- Bake for 10-12 minutes until golden brown.
Air Fryer:
- Lightly spray shrimp with cooking oil.
- Air fry at 370°F for 8-10 minutes until crispy and golden brown.
Note: Cooking times may vary. Ensure shrimp reach an internal temperature of 165°F.
2) In a bowl, toss the prepared Mind Blown Crispy Crunchy Fried Shrimp with the salsa. Set aside.
3) Spread a parchment lined-baking sheet with the tortilla chips.
4) Warm up the queso then drizzle over the chips, then add the black beans, salsa coated Mind Blown Crispy Crunchy Fried Shrimp, and the remaining of the ingredients: avocado, sour cream, cilantro, jalapeño and serve with lime wedges. Enjoy!
